Breaking news: Costco has quinoa!
For $9.35 you can get pre-washed quinoa, a gluten free, wheat free, rice free, soy free, dairy free, egg free alternative to your breakfast, lunch, or dinner grains.
Today I decided to have it for breakfast:
1 cup quinoa (dry measure)
1 cup water (liquid measure)
1 cup almond milk (liquid measure)
Pour into a saucepan. Stir. Bring to a rapid boil. Turn temp to low. Cover. (I had to stay nearby because the almond milk was frothing a bit, so when it got close to boiling over I would lift the lid to reduce the foam).
Cook for about 15 min. The quinoa should be tender and little curly strings should appear after separating from the grain.
Remove from heat.
Add chopped pecans ( I used about 1/2 cup). REAL maple syrup (forget the fake stuff; I used probably about 1/8 cup). Add Cinnamon. (I served up my own portion and added a few dashes of cinnamon; seeing as though it was so tasty, you can probably just add it to the whole batch…probably about 1 teaspoon-ish)
You can of course try other stir ins like blueberries, walnuts, dried cranberries or apricots.
